Who knew?
The first thing that struck me about this book was how comprehensive it is. Carrie Forbes covers what to look for in a slow cooker, recommended sizes, suggestions for care, a wide variety of strategies, and also just about every food I could think of to put in one, plus a few more. Oh! and they're all gluten-free!
I've been a fan of the slow cooker for as long as I can remember. I use them year-round and own several. Still, I'd never thought of salmon fillets or blackberry preserves as options for my trusty Crock Pot. For all these years, the only thing I have really done with mine, aside from hot cider in fall, is long, slow cooking. And I must confess, my favorite recipe in this book so far, Dijon Beef Roast, is one of those longer-cooking recipes. What can I say? I just love recipes like this with moist, tender meat and the possibility of leftovers for lunch the next day.
Still, I have had such fun playing with Ms. Forbes' recipes that take only two hours. I have never done that before. It's created a whole new way of looking at these little machines. Now I want all sizes. I think I may have to order more.
Of course, many of us for whom gluten-free is crucial, are really in for another treat. It's so nice to have all these options, breakfasts, desserts, breads, and main dishes of all sorts, that are safe for us and won't cost a week's wages.
